Ingredients

  • 14 oz Extra Firm Organic Tofu

  • 2 whole Yukon Gold Potatoes

  • 1/2 cup Roasted Corn

  • 1 1/2 cup Pre-Cooked Black Beans (or one 15 oz can)

  • 1/2 cup Bell Pepper (any color)

  • 1 cup Sweet Onion

  • 1 cup Shiitake Mushroom (or any mushroom)

  • 2 cloves Garlic

  • 1/4 tsp Turmeric Powder

  • 1/2 Lemon (for juice)

  • Black Pepper (to taste)

Directions

  • Preheat oven to 350° F

  • Remove tofu from package and water

  • Place tofu on a clean kitchen towel, wrap snuggly, and set aside for 5 minutes to absorb additional water or press out the water using a tofu press

  • Remove from towel and crumble tofu into a large mixing bowl

  • Dice potatoes, onions, and bell peppers and add to tofu

  • Mince garlic, rough chop mushrooms, and add to tofu

  • Add black beans, corn and seasonings to tofu and potatoes, and mix well with a spatula or by hand

  • Place mixture on a parchment-lined cookie sheet and place in oven for 40 minutes or until golden brown

  • Once cooked, add to your favorite whole food, plant-based, gluten-free tortilla or taco shell or serve over salad
