Ingredients

CRUST:

  • 2 cups Peanuts

  • 5 pitted Medjool Dates

  • 1 tsp Vanilla Bean Powder

FILLING:

  • 12 oz Unsweetened Chocolate

  • 4 whole Bananas

  • 15 pitted Medjool Dates

  • 1 tsp Vanilla Bean Powder

Directions

  • Combine all the CRUST ingredients in a food processor and blend until a fine crumb is achieved being careful not to over-blend into a powder

  • Press crust mixture into a 9” tart or pie dish

  • For the filling, add bananas, dates and vanilla to a high speed blender and blend until smooth

  • In a double-boiler, add chocolate and melt it until completely smooth

  • Add melted chocolate to the banana mixture and blend until fully combined

  • Pour completed filling mixture into the crust using an offset spatula or other utensil to create a smooth top surface

  • Refrigerate for one or more hours to allow it to set

  • Prior to serving, top with sliced bananas, chopped peanuts, and a drizzle of melted peanut butter

NOTE: To get nice, smooth edges when slicing, cut the pie using a knife heated with hot water.
