Ingredients
4 cups Yukon Gold Potatoes
2 cups Carrots
16 oz Banza Chickpea Elbow Pasta
3 tbsp Onion Powder
2 tsp Garlic Powder
1 tsp Dried Oregano
2 tbsp Nutritional Yeast
1/4 tsp Ground Turmeric
1/2 tsp Red Pepper Flakes (optional)
1 tbsp Lemon Juice
1/3 cup Vegetable Broth (no salt or homemade)
1 tbsp Parsley
1/2 cup Fresh or Frozen Peas
Directions
Steam the potatoes and carrots until cooked (approximately 15 minutes). Set aside.
Bring pot of water to boil, add pasta to boiling water. Reduce to simmer and stir occasionally. Cook to desired firmness (about 7-9 minutes). Add peas to boiling pasta for the last 2-4 minutes. Strain.
While pasta is cooking, create the no-cheese sauce by adding potatoes and carrots to blender with onion powder, garlic powder, nutritional yeast, dried oregano, ground turmeric, red pepper flakes (optional), lemon juice, and vegetable broth. Blend until smooth and creamy.
Pour no-cheese sauce over pasta and peas. Gently fold until well incorporated.
Serve and enjoy!
