Ingredients
3-4 Fresh, Ripe Peaches
4 Frozen Bananas
1/2 tsp Cinnamon
1/2 tsp Vanilla Bean Powder
1/2 cup Diary-Free Plain Yogurt
Sliced Tiger Nuts or Rolled Oats
Date Syrup
Directions
Preheat oven to 350°F
Slice peaches in half and gently remove pit.
Place peach halves in oven safe glass casserole dish with the cut side face down.
Bake peaches for 10 minutes then flip peaches over and cook an additional 5 minutes or as desired (checking frequently)
While the peaches are baking…
Blend bananas, cinnamon, vanilla bean powder, and yogurt in a food processor or blender until creamy (like soft serve ice cream)
Once peaches are done cooking, remove from oven cut into bite-size cubes.
Place peach cubes into serving dish and top with banana “nice cream” mixture.
Sprinkle Tiger Nuts on top and drizzle with Date Syrup.
