Ingredients
1 cup Steel-Cut Oats
4 oz Mushrooms
1 clove Fresh Garlic minced
1/4 tsp Turmeric
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1 tbsp Nutritional Yeast
2 cups Filtered Water
2-3 cups Chopped Leafy Greens (Bok Choy, Green Kale, Dino Kale, Spinach)
1/2 tbsp Chia Seeds
3/4 tbsp Ground Flax Seeds
Directions
Add steel cut oats and fire roasted tomatoes to a stovetop pot.
Dice mushrooms and add to pot.
Mince garlic and add to pot.
Add turmeric, onion powder, garlic powder, nutritional yeast, and filtered water to pot.
Stir until well mixed.
Place pot on stovetop and bring to a boil.
Once boiling, reduce heat and allow to simmer for 10 minutes (or as desired). Stir frequently to avoid sticking.
Chop leafy greens and add to simmering pot and mix well to allow greens to cook down.
Let simmer an additional 5 -10 minutes or until desired tenderness.
Stir frequently to avoid sticking.
Add water gradually as necessary for consistency.
Grind chia seeds and flax seeds and add to serving bowl.
Pour cooked oats and vegetables into serving bowl and mix well to incorporate chia and flax seeds.
Top with broccoli sprouts or other sprouts (optional)
Add crushed red pepper, hot sauce, sriracha, or other spices and seasonings as desired (optional)
